A Note From The Roaster:
For The Love Of Coffee
Coffee has been a part of my life since I was old enough to reach the mugs from the top cabinet (with help from a step stool).
In the mid 1990's, my interest in coffee was further sparked while spending some time in Hawaii. I grew to appreciate a well balanced roast; my taste developed and finding a good bean became important to me. Never one to enjoy the burnt taste that so often was the preferred roast level back then, I kept searching for a well balanced brew.
In 2003, my then-girlfriend, Marta, gave me a little coffee roaster for my birthday. Being a musician, I recognized that each bean had its own individual characteristics that set it apart, its own chord and timing… discovering its true potential appealed to me much like creating music does. I'm also a craftsman, I like to tinker with things, take them apart, figure out what makes them tick. I began to research the beans, their roast levels, the mechanics of the process. My obsession quickly became figuring out which techniques brought out each bean's optimum flavor...what makes each bean tick. I experimented with different methods such as popcorn poppers, cast iron skillets on the stove top and roasting outside on the grill. After a while I outgrew that little roaster, and purchased a larger model. The obsession grew to passion. Working with coffee became my life and my escape. It fueled my need for creativity, and it was a place I found peace. I loved roasting and enjoyed sharing my coffee with friends and family.
In 2009, Marta became my wife. Our wedding favors included fresh roasted coffee; our vacations centered around visiting and meeting roasters around the country. It was clear that this was becoming more than just a hobby. One day, Marta suggested as an aside that she thought it would be cool to start roasting professionally. Why not? Why not do what we love and share it with others on a grander scale?
Hence was born Noble Coyote Coffee Roasters. Our small-batch coffee roastery based in the Expo Park neighborhood of Dallas, TX.

At Noble Coyote Coffee Roasters, we only purchase fair trade or direct trade beans that have been grown using sustainable methods.
