This decaffeinated coffee is from the Huehuetenango region of Guatemala. It has been sourced from lots selected from small producers based on cupping evaluations. The coffee is harvested by indigenous families on farms that average 1.5 hectares in size. After selection, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extract the caffeine without extracting the coffee’s particular flavor.
