Finca Chambakú is the Restrepo family’s 12-hectare farm located in Manizales (Villamaría), Caldas. The farm is situated at the base of the Andean Mountain range. High altitude, microclimates, and volcanic ash enriched soil make it a perfect growing area. Their land runs from 1450 masl to more than 2000 masl.

Elmer Restrepo and his son, Juan Felipe Restrepo, own Finca Chambakú. Juan is a second-generation coffee grower and Q Grader. They have invested in state-of-the-art facilities for processing both washed and natural coffees, which also includes a fermentation lab. Among their objectives is fertilizing with organic matter and practicing supreme post-harvest care. Greenhouses with 3-level canopies and temperature control were built to carry out a better drying process, perfecting the final cup.

You will want to linger over this sweet, juicy Colombian coffee from Finca Chambakú. At first the sweet notes of maple syrup and pecan will wash over your palate. Let this coffee cool down - if you can wait - and you’ll notice warm fragrant baking spices, like nutmeg and cinnamon on the finish.
