This coffee is grown by a small group of farmers that are members of Alpes Andinos, an organization of coffee farmers working in the La Coipa and Huabal districts of Cajamarca in northern Peru. Their farms are located at elevations ranging from 1800-1850 masl near the village of La Naranja. After meticulously picking only ripe cherries, these producers undertake an extended double fermentation process, first fermenting the coffees in cherry for 48 hours before pulping on the fourth day and fermenting for an additional 48 hours to fully loosen the mucilage for washing. The fully washed parchment is then transferred to solar dryers for 15-2- days until ideal moisture levels have been achieved.
